eggplant parm

i make this a lot
and its always delish
but last night i made it for community group
and i tried to assemble it at lunch and bake it after work
and the sitting in the fridge made the eggplants rubbery
so make it like it says :)


 My Eggplant Parmesan

3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1 cup ricotta cheese
1/2 teaspoon dried basil
1/2-1 teaspoon of red pepper flakes



preheat oven to 350
peel and slice the eggplant thinly
dip in egg
dip in bread
place in a single layer on a baking sheet
bake for 5 minutes on each side
get out a baking dish
put a layer of sauce on the bottom


i like this sauce
then put a layer of the baked eggplant pieces
then a layer of all three cheeses
and repeat until you run out
but end with the cheese layer
then top with basil and red chili flakes
then bake in the preheated oven for 35 minutes
or until golden brown
